OMG Homemade Chocolate Lava Cake

OMG Homemade Chocolate Lava Cake – When you have that late-night chocolate craving, this is easy to make and hits the spot! (all ingredients are organic)

 

Ingredients OMG Homemade Chocolate Lava Cake

6 oz semi sweet chocolate chips

1 stick (8 TB butter)

3 eggs (if you desire pasteurized eggs, boil each egg in shell for one minute before using, then shock in ice water)

1/3 cup sugar

1 tsp vanilla extract

1 TB plus 1 tsp raw cocoa powder

2 TB flour

pinch (1/8 tsp) Himalayan pink salt

cooking spray

1-2 TB flour for dusting 4 ramekins

ice cream or whipped cream for serving

Method

preheat oven to 400F

place a sheet of aluminum foil on a middle rack

spray and flour 4 ramekins

place sugar and eggs in mixer with whisk and beat until light and fluffy

place chips and chopped butter in a glass bowl and microwave for 30 sec, 20 sec, 10 sec stirring between each zapping. If you are worried about burning the chocolate or don’t like microwaves, use a double boiler.

whisk cocoa, flour and salt in a small bowl

add vanilla to melted chocolate

pour cocoa mix in mixer with eggs/sugar on low speed

add melted chocolate mix until combined

divide batter between four ramekins

bake on aluminum foil on rack for 12-15 minutes (experiment with the gooey factor)

cool 5-7 minutes

serve with ice cream or whipped cream, if desired
