VIDEO Serio Cooks Creamy Spinach Ricotta Pasta

Here’s an easy-to-make recipe that gives everyday pasta a healthy. creamy finishing touch. This is called VIDEO Serio Cooks! – Creamy Spinach Ricotta Pasta.

 

 

INGREDIENTS VIDEO Serio Cooks Creamy Spinach Ricotta Pasta
1 box of Rotini pasta (twists)
1 tablespoon olive oil
1/2 cup finely chopped onion
2 minced garlic cloves or 2 tablespoons of minced garlic
1 cup of chopped fresh or frozen spinach
1 cup ricotta cheese (make your own ricotta HERE)
1/4 cup whole milk (low fat and skin milk won’t give the creamy texture)
2 tablespoons lemon juice (added to milk, this will create buttermilk)
1/4 cup grated Parmesan0-Reggiano cheese
sprinkle of freshly ground nutmeg
ground pepper (to taste)

METHOD VIDEO Serio Cooks Creamy Spinach Ricotta Pasta

While cooking pasta, saute onions and garlic over medium heat in deep pan with olive oil for five minutes.  Reduce heat slightly and add both spinach and ricotta and cook until spinach reduces in size.  Then stir in lemon juice, milk, cheeses and nutmeg and allow to simmer at low-medium heat while pasta finishes cooking.  Drain pasta saving some of the water.  Put pasta in a serving bowl and mix in creamy spinach ricotta sauce.  If sauce is too thick, stir in one tablespoon of pasta water until sauce is creamy.  Add a sprinkle of nutmeg and a little more cheese and serve.
