Elizabeth takes us to Marrakesh, Morocco on the continent of Africa.  Why?  Because you can find a very odd delicacy made with Sheep’s Brain, plus it gave us a chance to play a snippet of CS&N’s Marrakesh Express!

Marrakesh is the fourth largest city in Morocco, but one of it’s most important involving tourism and trade.

In addition to the amazingly intact 12th century minarets rising up from the desert, Marrakesh is known for it’s marketplace filled with food and clothing vendors, and even snake charmers.  Accommodations in Marrakesh range from small bed and breakfast room to luxurious five star hotels.

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine. She survived a year and half of culinary tutelage under a maniacal Swiss-German chef and is a graduate of NYIT, Magna Cum Laude with a Bachelor’s degree in Hospitality, Business and Labor Relations.
