Lifestyle Diet Reset – Croque Monsieur

Let’s take the Lifestyle Diet Reset up a notch! Great for any meal of the day. Disclaimer – I did not try this with plant-based milk, but it should be okay if you want to try it that way.

Luxury Lifestyle Diet Reset – Croque Monsieur Serves 2

INGREDIENTS

2 slices whole wheat or Ezekiel bread. If you have time, you can make this bread

4 slices Black Forest Ham

4 slices low-fat Swiss (like Aline Lace)

2 TB butter

2 TB flour

1 cup lowfat milk (or plant-based)

!/8 tsp freshly-grated nutmeg

1/2 tsp Dijon mustard

pinch of salt and white pepper

cooking spray

METHOD

Preheat oven to 375F

In a saucepan, melt the butter and a minute later, whisk in the flour. (medium-high heat)

Be careful not to brown the roux.

Whisk in the milk.

Keep whisking until sauce thickens.

Add mustard, nutmeg, salt and pepper. Set aside.

Make sandwich with 2 slices ham and 2 slices cheese

Spread sauce over ham/cheese and top with slice of bread

Spray a sheet pan with cooking spray.

Place sandwiches (carefully) on sheet pan.

Bake 10 minutes or until sauce is bubbly

Serve immediately (the sauce is hot).
