Just before Thanksgiving while everyone was scurrying around and not paying attention to the news, the FDA announced its approval of Upside Foods’ Lab Grown Chicken.  Let THAT sink in… chicken “meat” that was grown in a lab is heading to your grocery stores.  Oh wait, the story get better.  So who is Upside Foods?  It’s the start up business that attracted high-profile investors like Sir Richard Branson, and America’s number one farmland owner Bill Gates.  Where was the time allocated for public comment?  Where is the research that this stuff is safe to eat?  How is is possible that the approval process that normally takes years, was done so quickly?  This whole deal STINKS!

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine.
