Off the Tree Quick Tangerine Clafoutis Pancake

Use any fresh fruit for this.

Our tree is filled with beautiful, ripe tangerines and we have to use them this week. This clafoutis (essentially a large pancake) is not as sweet as most, but lovely with Lifeboost coffee or tea. Some in our our family add powdered sugar on top or a scoop of vanilla ice cream.

Ingredients (organic, if possible) Off the Tree Quick Tangerine Clafoutis Pancake

1 pat of butter to grease the pie dish
3 cups tangerine slices, seeded
1/4 cup whole milk
3 eggs
1 tsp vanilla
2 TB Ghee
pinch of pink salt
3/4 cup flour
organic powdered sugar for garnish, if desired

Method

Preheat oven to 350 degrees F. Butter or spray a glass pie dish and add fruit in a circular pattern. Set aside. In a food processor, add milk, egg, ghee and vanilla. Combine.   Add honey and salt. Buzz. Add flour mixture and buzz until just combined. Pour over fruit in pie dish. Bake for 43-47 minutes, or until a toothpick comes out nearly clean. Serve warm.
