Her current late night favorite is this recipe that packs a LOT of healthy ingredients AND flavor!
Be sure to allow the cookies to cool completely!

Almond Cookies with Chocolate Chips and Coconut Flakes

Ingredients:
2 cups almond flour (192 Grams)
1/4 cup coconut flakes
1/2 cup chocolate chips
1/4 cup coconut oil fully melted
1/4 cup maple syrup
1 tsp vanilla extract
1/2 tsp baking soda
1/4 salt

Directions:
1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. Mix Dry Ingredients: In a large bowl, combine almond flour, coconut flakes, baking soda, and salt. Mix well.
3. Combine Wet Ingredients: In another bowl, mix melted coconut oil, maple syrup, and vanilla extract until well combined.
4. Mix Everything Together: Pour the wet ingredients into the dry ingredients. Stir until a dough forms. Add the chocolate chips and mix until evenly distributed.
5. Form Cookies: Scoop out tablespoon-sized portions of the dough and place them on the prepared baking sheet. Flatten each ball slightly with your fingers.
6. Bake: Bake in the preheated oven for 15 minutes, or until the edges are golden brown.
7. Cool: Allow the cookies to cool on the baking sheet completely before transferring them to a wire rack.
