Gluten Free Low Sodium Quick Cheesy Enchiladas

Gluten Free Low Sodium Quick Cheesy Enchiladas

Preheat oven to 375F

INGREDIENTS

1) package of 6 spelt tortillas

1) 6 oz bag of shredded Mexican cheese

one 8 oz mozzarella log

one packet of Simply Organic Enchilada Sauce

spray a 13×9 baking dish with olive oil spray

METHOD

wrap tortillas in aluminum foil and place in oven 10 minutes to warm up

grate mozzarella into a medium bowl

mix in shredded Mex cheese (reserve 1/3 cup for the top)

split filling among the 6 tortillas

fold in sides and roll up, add to baking dish

pour remaining sauce over top, sprinkle over remaining cheese

Cover dish with aluminum foil and bake 15 mintes

Remove cover and bake 5 more minutes until bubbly

About Elizabeth Dougherty

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine. She survived a year and half of culinary tutelage under a maniacal Swiss-German chef and is a graduate of NYIT, Magna Cum Laude with a Bachelor’s degree in Hospitality, Business and Labor Relations.
