Here is the info on pork consumption per capita: pork.

The USDA (and Tom Vilsack) just announced a deal that sends American pork to INDIA.  Does this make sense? Do you believe it? Think about that for a moment.  At a time when you can’t find lunchmeat on the grocery shelves, American pork is being sent to a country with many Hindus who don’t generally consume pork!  Or, are they a go-between for another country? Elizabeth has a possible explanation and you’re not gonna like it.

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine.
