Easy Chocolate Oatmeal Breakfast Cake

Breakfast doesn’t have to be boring ! Make it fun and energy filled with
Chocolate Oatmeal Breakfast Cake . This can bake while you get ready for work or school, or even the night before you plan to serve it.

INGREDIENTS Chocolate Oatmeal Breakfast Cake

See method for order to add ingredients. We are using the “muffin” method here.

1/2 cup coconut oil

and 1/4 cup maple syrup

then 1/4 cup honey

1/4 cup yogurt

1 tsp vanilla

whip 1 egg

measure 1 cup cooked, dense oatmeal

1 cup flour

4 TB unsweetened cocoa

1/2 tsp salt

1/2 tsp baking soda

1/4 to 1/3 chocolate chips

 

METHOD

Preheat oven to 350F

Spray an 8×8 pan with cooking spray

In bowl, mix wet ingredients, except oatmeal

Add oatmeal.

In another bowl, whisk dry ingredients, except chips

In a stand mixer or by hand, mix dry into wet.

Add chips and fold in for about 10 seconds.

Use a spatula to put batter in pan.

Bake for 35 minutes, or until toothpick comes out clean. Enjoy! If you like that, try THIS.

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine.
