Coconut Mounds - No Bake

3 Ingredient No Bake Coconut Chocolate Mounds

Make these 3 Ingredient No Bake Coconut Chocolate Mounds. I love a good late night snack. And you don’t have to fire up the oven. These mounds are so quick and easy to make, you can enjoy them anytime. I guarantee, this recipe will not raise your electric bill!

INGREDIENTS – 3 Ingredient No Bake Coconut Chocolate Mounds This could not be easier!

2 cups unsweet coconut

1/2 cup honey plus 1 TB

2 TB plus 4 tsp coconut oil

9 oz chocolate chips

METHOD

In a bowl, combine coconut and all honey

Add 2 TB coconut oil

Mixture should lightly stick together, when squeezed with clean hands

Put chips in a small bowl, add remaining 4 tsp oil

Microwave in 30 second increments until half melted, stirring in between

When half melted, remove and stir until just melted

On a silpat lined baking sheet, use two spoons to put melted chocolate in 1/2 tsp amount on sheet, forming discs

When you have 12 discs, put in freezer for 30 minutes until set

Form the coconut into little mounds on disks

Spoon over remaining chocolate. You may have to micro for a few seconds if it’s not adequately melted to spoon it.

Put back in fridge or freezer, until set. Then you can store in the fridge in a plastic baggie. Enjoy! If you like that, you’ll love THIS or THIS no bake treat.
