Four Ingredient Chocolate Almond Truffles are satisfying, healthy and EASY to make.  If you’re a chocolate lover, but with some dietary restrictions, you know that finding a dessert that fits all categories is difficult.  These truffles fit the bill, plus, they’re Paleo, there’s no refined sugar and they’re gluten-free.  There’s another big benefit, they’re no-bake, so they’re safe and kids will love scooping out the truffle mix from the bowl.  Remember, these are “n0-bake” so if you’re getting assistance in the kitchen, make sure they have clean hands.  Our recipe calls for coconut milk powder which may not be in your typical grocery store, but is readily available online. Roll in some crushed almonds, coconut or cocoa powder if you don’t like them sticky.

AOC Nut Balls – No Gas Stove Required

FOUR INGREDIENTS

  1. 1 cup almond butter
  2. 1/4 cup plus 2 TB maple syrup
  3. 1/3 cup raw cocoa
  4. 1/3 cup coconut milk powder
  5. Optional – crushed almonds to roll in

METHOD

Mash in a big bowl and stir with a wooden spoon or spatula.
When combined, use small melon-ball size scoop to scoop balls onto a cookie sheet lined with parchment or silpat.
They will be soft and sticky, so put the tray in the freezer for about 30-45 minutes.
Take out, and will clean hands, roll into smooth balls.
